  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy whipping cream
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1/2 cup fresh blackberries
  • 1 teaspoon lemon zest (optional)
  • 2 tablespoons honey or fruit glaze (optional)

Method
 

  1. Preheat your oven to 350°F. Roll out your sugar cookie dough on a pizza pan or large baking sheet, forming a circle about 12 inches in diameter.
  2. Bake the cookie base for 12-15 minutes until golden brown around the edges and just set in the center. Let it cool completely on the pan.
  3. While the crust cools, prepare your cream cheese frosting by beating the softened cream cheese until smooth and fluffy. Gradually add powdered sugar, vanilla extract, and heavy cream, mixing until light and airy.
  4. Once the cookie base is cool, spread the cream cheese mixture evenly across the surface, leaving a small border around the edge.
  5. Arrange your berries artistically over the cream cheese layer, pressing them gently into the frosting.
  6. If using lemon zest, sprinkle it over the top now. For extra shine, warm honey or fruit glaze slightly and brush it over the berries.
  7. Refrigerate your completed Summer Berry Dessert Pizza for at least 30 minutes before slicing. Use a sharp knife or pizza cutter to slice into wedges and serve.
