Ingredients
  

  • 6 medium ripe peaches, chopped
  • 2 tablespoons fresh ginger, peeled and grated
  • 3 tablespoons fresh lime juice
  • 2-3 tablespoons honey, adjust to taste
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • Fresh mint for garnish, optional

Method
 

  1. Prepare your peaches by washing them thoroughly, cutting them in half, removing the pits, and roughly chopping them.
  2. Peel your fresh ginger using the edge of a spoon and grate it finely.
  3. Add the chopped peaches, grated ginger, lime juice, honey, coconut milk, vanilla extract, and sea salt to your blender. Blend on high speed for about 60 seconds until completely smooth.
  4. Pour the Peach Ginger Chilled Soup through a fine-mesh strainer if you prefer an ultra-smooth texture.
  5. Transfer the soup to a covered container and refrigerate for at least 2 hours.
  6. Before serving, give the chilled soup a good stir and garnish with fresh mint leaves.

Notes

Use ripe peaches for the best flavor. Adjust sweetness based on the ripeness of the peaches. Chill overnight for enhanced flavor.
