- Prepare your peaches by washing them thoroughly, cutting them in half, removing the pits, and roughly chopping them.
- Peel your fresh ginger using the edge of a spoon and grate it finely.
- Add the chopped peaches, grated ginger, lime juice, honey, coconut milk, vanilla extract, and sea salt to your blender. Blend on high speed for about 60 seconds until completely smooth.
- Pour the Peach Ginger Chilled Soup through a fine-mesh strainer if you prefer an ultra-smooth texture.
- Transfer the soup to a covered container and refrigerate for at least 2 hours.
- Before serving, give the chilled soup a good stir and garnish with fresh mint leaves.
Notes
Use ripe peaches for the best flavor. Adjust sweetness based on the ripeness of the peaches. Chill overnight for enhanced flavor.
