Ingredients
  

  • 1 pound pizza dough (store-bought or homemade)
  • 2 cups cooked chicken breast, diced
  • 3/4 cup BBQ sauce (your favorite brand)
  • 1 large fresh mango, diced (about 1.5 cups)
  • 2 cups mozzarella cheese, shredded
  • 1/2 medium red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)

Method
 

  1. Preheat your oven to 475°F (245°C). Place a pizza stone inside if you have one.
  2. Roll out pizza dough on a floured surface to about 12-14 inches in diameter. Brush the edges with olive oil.
  3. Spread BBQ sauce evenly across the dough, leaving a one-inch border.
  4. Scatter half the mozzarella cheese over the sauce, then distribute diced chicken evenly. Season lightly with garlic powder.
  5. Add mango chunks and sliced red onion, then top with remaining mozzarella cheese.
  6. Transfer the pizza to the oven and bake for 12-15 minutes until the crust is golden brown and cheese bubbles.
  7. Remove from oven and let rest for 3-4 minutes. Garnish with fresh cilantro and optional red pepper flakes. Slice and serve.

Notes

For extra crispiness, par-bake your crust for 5 minutes before adding toppings. Pat mango chunks dry to prevent sogginess. Toss chicken in BBQ sauce before placing on the pizza for enhanced flavor.
