Method
- Preheat your oven to 475°F. Place a pizza stone inside if you have one.
- Prepare your marinade by combining lime juice, lime zest, minced garlic, olive oil, cumin, chili powder, salt, and pepper in a bowl.
- Cut chicken breast into bite-sized pieces and add to the marinade, tossing until coated. Let sit for at least 15 minutes.
- Heat a large skillet over medium-high heat and cook the marinated chicken for 6-8 minutes until fully cooked.
- Roll out your pizza dough on a floured surface to about 12-14 inches in diameter.
- Brush the dough lightly with olive oil.
- Sprinkle half the mozzarella and Monterey Jack cheese across the dough, layer the cooked chicken pieces evenly, and add sliced red onions.
- Top with remaining cheese and transfer to the preheated oven.
- Bake for 12-15 minutes until the crust is golden brown and cheese bubbles.
- Remove from oven and top with fresh chopped cilantro. Let cool for 2-3 minutes before slicing.
- Optionally, drizzle with sour cream or crema and serve with extra lime wedges.
Notes
Allow pizza to cool completely before storing. Store in an airtight container for up to 3 days. Reheat in the oven at 375°F for 8-10 minutes for best results.
