Ingredients
  

  • 1 pound pizza dough
  • 1 pound boneless chicken breast
  • 3 tablespoons fresh lime juice
  • 1 tablespoon lime zest
  • 1/2 cup fresh cilantro, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon cumi
  • 1/2 teaspoon chili powder
  • 2 cups mozzarella cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1/2 medium red onion, thinly sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • sour cream or crema (optional) for drizzling

Method
 

  1. Preheat your oven to 475°F. Place a pizza stone inside if you have one.
  2. Prepare your marinade by combining lime juice, lime zest, minced garlic, olive oil, cumin, chili powder, salt, and pepper in a bowl.
  3. Cut chicken breast into bite-sized pieces and add to the marinade, tossing until coated. Let sit for at least 15 minutes.
  4. Heat a large skillet over medium-high heat and cook the marinated chicken for 6-8 minutes until fully cooked.
  5. Roll out your pizza dough on a floured surface to about 12-14 inches in diameter.
  6. Brush the dough lightly with olive oil.
  7. Sprinkle half the mozzarella and Monterey Jack cheese across the dough, layer the cooked chicken pieces evenly, and add sliced red onions.
  8. Top with remaining cheese and transfer to the preheated oven.
  9. Bake for 12-15 minutes until the crust is golden brown and cheese bubbles.
  10. Remove from oven and top with fresh chopped cilantro. Let cool for 2-3 minutes before slicing.
  11. Optionally, drizzle with sour cream or crema and serve with extra lime wedges.

Notes

Allow pizza to cool completely before storing. Store in an airtight container for up to 3 days. Reheat in the oven at 375°F for 8-10 minutes for best results.
