Ingredients
  

  • 1 large ripe cantaloupe (about 4 cups cubed)
  • 1/4 cup packed fresh mint leaves
  • 2 tablespoons fresh lime juice
  • 1-2 tablespoons honey
  • 1/2 cup plain Greek yogurt
  • Pinch of sea salt
  • 1/2 cup ice cubes

Method
 

  1. Cut the cantaloupe in half and scoop out the seeds. Slice off the rind and cut the flesh into rough chunks.
  2. Add the cantaloupe chunks, fresh mint leaves, lime juice, honey, Greek yogurt, and a pinch of salt to a blender. Add the ice cubes.
  3. Blend on high speed for about sixty seconds until completely smooth.
  4. Taste and adjust sweetness or acidity as needed.
  5. Pour into bowls, garnish with mint leaves, and serve.

Notes

Refrigerate cantaloupe overnight for best results. Don't skip the salt; it enhances flavors. Serve chilled for the best experience.
