Ingredients
  

  • 1 pound pizza dough (store-bought or homemade)
  • 12 ounces large shrimp, peeled and deveined
  • 8 ounces fresh mozzarella cheese, tor
  • 1 cup fresh basil leaves, packed
  • 2 large lemons (zest and juice)
  • 4 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Method
 

  1. Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven while preheating.
  2. Prepare the shrimp by patting them dry with paper towels. Toss with 1 tablespoon olive oil, half the minced garlic, salt, pepper, and red pepper flakes.
  3. Roll out your pizza dough on a lightly floured surface to about 12-14 inches in diameter. Transfer to parchment paper.
  4. Mix the remaining olive oil with the remaining garlic and the zest of one lemon. Brush this mixture over the dough.
  5. Distribute the torn mozzarella evenly across the dough. Sprinkle half the fresh basil leaves over the cheese.
  6. Arrange the marinated shrimp on top of the cheese, spacing them evenly.
  7. Transfer the pizza to the preheated oven. Bake for 12-15 minutes until the crust is golden brown and the shrimp are pink.
  8. Remove from the oven and squeeze the juice of one lemon over the pizza. Add the remaining basil leaves and sprinkle with Parmesan cheese.
  9. Let the pizza rest for 2-3 minutes before slicing.

Notes

Use fresh shrimp for best results. Ensure shrimp are dry before marinating to prevent sogginess. Consider par-baking the crust for 5 minutes for a crispier base.
